As topic says,

do you simply undo the hose near the bottom of the engine which connects to the steering rack, start the car and at the same time keep topping up the power steering resovoir bottle with new fluid ?

you could do it that way, but the return is pressurised so you need a long hose into a bucket under rags or something

might be easier to hook a hose to the reservoir outlet into a bucket, then another hose with a funnel (top of a soft drink bottle or soething) to the inlet of the pump - uses the reservoir to reduce the pressure
