Carbon fibre/fibreglass is pretty easy to work with. just make sure you mask with tape around the area you're going to cut, helps from chipping/cracking the area you don't want to damage. Dremel or die grinder will be your best friend. I'm installing my aerocatch bonnet pins on my gtr bonnet at the moment. Only have a die grinder and because the bonnet is aluminum, when it heats up it melts onto the die grinder, makes it a very long process.

You'll need the whole vertical support as well

You'll need a GTR vertical support as well as the bonnet latch. Have seen people beat the angled section from the latch connecting to the radiator support straight and modify the bottom section by welding or attaching a bracket to extend it to be able to bolt back to the car

My car is due to have the EastBear kit too. Front bumper with lower lip, side skirts and rear bumper. Front bumper is different to the one you had though Daniel. Should be on in a fortnight's time. No lower side skirt or rear pods, but will replaced with a carbon rear diffuser. Will have pics up.

Chasing a branded wing for the R34. Has to line up with standard R34 spoiler holes.
