What's with the one hand turn on the last corner with the other hand on the gear stick??

You did it on both laps!!!

I dunno - I have no real answer for that.

It just felt comfortable I guess. It may extend from the fact I have missed 2nd to 3rd a few times before when in tight corners, so I like to keep on the stick and make sure I stick the shift properly. Because gearboxes are expensive.
