Ive always used benedicts ultimates for street and track and never had issues, just alot of brake dust. Had brake fade because the standard fluid boiled. Now have some good dot 5 and havent had an issue. If your not doing track days all the time, some benedicts, ferodo or similar will be good enough and decent for the pricing. braided lines will help, but change the pads and the lines first, then bleed brakes and put the dot 5 in

If it were stripped already with CAMS approved cage, Id put it back together with only parts I needed so its on a nice diet, nice and light. Also maybe looking at replacing some windows with lexan? single seat some nice power mods, Id say 250rwkw would keep me happy - so any turbo upgrade + supporting mods. Brake upgrade with ducting (larger rotors, braided lines, pads, could even go brake bias if you were real serious) suspension and driveline upgrades (clutch, diff, springs, shocks, caster, camber, sway bars etc) then light wheels (with some nice gaps for air flow) and semi slicks If you want a bit of an idea - check out Russ's (giant's) R34 build up - sure its a GTR but you can follow similar ideas

They do need to know everything. Although being a work vehicle, Im not sure if your 'personal' insurance from your private car would be affected. Either way Id ask.... If it was your own car, and you hit a cow, horse, kangaroo, pelican! it is deemed an at fault/penalty claim cause your insurer cannot claim from that animal!

As mentioned before in previous stolen threads - approach the media, approach the police, approach the actual shopping centre management. while doing that, make sure you have full comp insurance and a good immobilser/kill switch. hell even unplug shit from your car when you leave it, i.e. AFM, ECU etc etc
