Possibly a very easy question but never dealt with defects before.

Bought an unregistered car with a red sticker. The paper work that came with it didn't have any of inspection stations ticked for example AIS, AUVIS, etc

The only thing ticked was: Full inspection and Light vehicle

As the car's rego has lapsed, it will need a blue slip. Is that all is needed to get the car on the road now?

what type of car?

if it is a grey import(im assuming it is), you can no longer get them cleared at pink slip stations(ais).

they all have to go to a blue slip(auvis) station to be cleared.

so, either way, its getting a blueslip.

Red defect + Unregistered.

Yeah, I'd be towing it to, especially to be able to get it to a place that will look after it more like JLM.

Hypothetically speaking, What if I were to remove my plates? Cops won't know the car is red stickered and I can say I'm driving to the nearest blue slip place, which I am, to get it rego'd

The car is reverted back to stock, it's no longer a defect, according to me anyways.

This is also correct! you may drive to the closest inspection station (to your home address)

To drive an unrego'd car you need to obtain a permit. No registration is no registration.

You won't be covered if you hit any car or person. Paying the tow fee or rental fee for a trailer will be cheaper n safer.

My understanding of the ,drive to the nearest station for a slip, is for pinks only. It's for cars just out of rego who still have the 3 mouths to get a pink slip. That's when you can shoot up the road to get a pink.
