Hi Martin, don't know about Driver Dynamics Defensive Drive course, maybe different. But I did a J Bowe one around 10yrs ago and they did a bit of theory about seating position, tyres, braking, handling concepts etc. The in car stuff was wet emergency stop, moose test, slalom etc. So if the daily driver has ABS, ESP all it really highlights is the limit of the tech. Don't get enough goes to aim to get the max without triggering. Drivers tends to be, too gentle and need a prod to reach the limits, then move to next exercise. IMO, if you have a vehicle you're comfortable with driving that hasn't got the tech or it can be switched off, use that. After all off street is the only safe/legal place to practice at the limit handling.
