Sour mix is equal parts lemon juice, lime juice and gomme (simple/sugar syrup) that you then shake the ever loving f**k out of. Most people assume it has far less sugar than it actually does and also leave out the lime juice :)

As for how to make a good sour...

Equal parts sour mix and spirit/liqueur of choice, half as much again sugar syrup, one egg white, ice, shake it like a polaroid picture! Seriously, shake it like a British nanny silencing a kid. You need to shake it HARD for some time to get it to blend properly and for enough of the ice to melt. Garnish with orange wheel and a cherry.

I'd go 45ml spirit/liqueur, 45 ml sour mix, 20 ml gomme and one egg white.

Hey Boz,

I too love Laphroaig 10, it is about the only scotch I drink these days. A close second for me would have to be Caol Ila. I find it to have more "taste" then the Oban. I tried the Laphroaig Quarter Cask and the 25 year old but I actually preferred the 10 year old. I used to drink quite a bit of Lagavulin 16 also. But I am finding it too sweet for me now.

Agreed about drinking it neat. Only way to really appreciate the flavours.

Don't get me started on Cognac though.

make it yourself :)

It's really simple. It's just a saturated sugar solution. Get 500g of fine white castor sugar and slowly keep adding boiling water to it until it JUST all dissolves. It should be somewhere between 300-350ml of water you use in total. It's normally around the 1.5:1-2:1 ratio of sugar:water

This will give you a rich sugar syrup which is a perfectly acceptable substitute for gomme.

Proper gomme is a bit harder. You need to make a supersaturated sugar syrup and add a saturated Gum Arabic solution to it in a 2:1 ratio syrup:Gum Arabic.

Gomme is sweeter than sugar syrup as the Gum Arabic prevents the super saturated solution from recrytsalising but it harder and more expensive to make.

Never gotten into Cognac, mainly because there is always more Whisky to try :)

My after dinner drinks tend to be either fortified's or maybe a liqueur like Dom Benedictine. Pre dinner it's always Campari. If it's lounging around it's whisky or occasionally spiced rum or REALLY good Tequila.

The Quarter Cask is just a more intense version of the 10. It's the same whisky using smaller casks for the maturation hence the higher level of evaporation and the higher abv and stronger flavour.

I'm finding my taste is getting more and more to the extreme side of things. Peatier whisky, black beers with strong roast malt flavours (also, celtic reds), bigger reds - Nebbiolo's may be my new favourite, unable to stomach the sweeter whites (need to be drier and more full bodied for me). At the same time my old love for pale ales, sourmash/bourbon and white wine is diminishing.

I find it fascinating how our tastes shift over time :)

I will admit however that I am still unable to find a cocktail I like more than an Old Fashioned... I think that Bourbon will always be a staple in my drinking for that reason alone. An Old Fashioned made on Basil Haydens may be the best drink ever.

I am a big fan of Herradura Anejo when it comes to Tequila. I like it better then the Patron. Good to sip on like a fine Cognac.

I am a big fan of Kraken or if I am feeling cheap, the Bacardi Oakheart is quite good for the price.

  • 2 weeks later...

I like it to. I also smash a bit of lime in there too

Haha yep I'm a cheap Kent so usually just put some pre bottled lemon juice in there if I'm feeling "fancy/its hot and summer"

But yep, If your listeninf mr boz and are making me a drink which i assume you will be at one stage:

It's 2 shots alcohol, 3-4 shots mixer over an over generous helping of ice in a short wide glass...

If I'm drinking to get blotto, big f**k off cup full of ice and throw as many shots as you see fit into it with a dash of dry lol.... Perfect

for all you drunks out there here is your chance, going up to bundy this weekend so if you want anything from the rum factory or anything from the big barrel (they make sh*t loads of amazing non alc. stuff there)

inbox me if you do and we can organize it or inbox me for my number, wont be going back up there for a while and there stuff is pretty well priced

    • Thanks Mate, I did know you could do that but i know there is a pump out there that you can bolt on and it all lines up. I was told about it and then forgot the model, I figure if i am pulling it apart i will just put a new one on
    • You can also remove the veins from the HICAS portion of your existing pump.
    • Trying to swap the rear subframe on my R34 and can't remove the L-shaped stay brackets between the front subframe mounts and the sill/chassis. I'm in the UK so rust is a problem. I've used loads of WD40 and then Tunap 103 for days beforehand. I backed off the bolts forward a bit, backward a bit repeatedly for ages to try and avoid snapping. They have all moved a few full turns. The one I've spent most time on has come loose and I can turn with fingers, and it will pull down and push up 2-3mm. But it won't come out. I can tighten it back up and loosen it off again repeatedly but it still won't come out. I assumed there's a captive nut inside but if that's broken loose then I can't understand why I can always tighten the bolt back up - I'd expect it to just spin both ways. Any ideas what's happening here? I can't visualise what's inside there to cause this.
